Christmas in Asia is kinda blowage, there is just no festive happy Christmas feeling and cheer. Not the end of the world but it doesn’t make for awesome time.
For Christmas, I made Eggnog for my University students.. and they went nuts for it. Which was kinda surprising as it’s is quite boozy, and they don’t drink much. A couple of them were really keen to try to make it themselves, so I gave them instructions. Actually what I did was take a crazy rich but good ‘cooked’ recipe and modify it a little. Turned out pretty good actually.
- 4 cups of milk + 5 cloves + 1 tsp cinnamon + 1/2 tsp of vanilla =heated in a sauce pan
- several egg yolks (6-12… up to you) + a cup of sugar in a bowl, mix until fluffy
- Slowly stir the hot milk into the sugar and egg yolks (mix the whole time)
- Put the whole thing back in the pan, cook on a low heat for 3-5 minutes stirring the whole time (that’s really important)
- Turn off the heat
- Add 4 cups of (milk / whip cream all milk all whip cream or any mixture in between), 1 tsp nutmeg, 1 tsp vanilla, 2 cups of rum (you can switch out 1/2 a cup of rum for whiskey for a different flavour, or you could try spiced rum, I’ve never done it but it seems like it would be yum :D)
- Mix it all up, put it in the fridge and let it sit for at least 6 hours. Serve yummy!
That’s basically how I made it. I like this style because it’s yummy and the eggs are cooked which doesn’t really bother me much but it seems to stress everyone else out. Plus it makes it nice and thick mm.
If this recipe isn’t tickling your fancy then try out some of the ones on the Eggnog site <here>, and here is the recipe that Tracey usually makes (mine is based off of hers with a couple of twists <here>.
Class was kinda fun, and on Monday after class I swung by Mel’s place with the leftovers and had a drink with her roommates and Derek’s parents who happened to be in town.
I just finished making some more eggnog, because we’re having a couple of friends over for drinks tomorrow night and having Christmas dinner on Sunday. I had to laugh, my roommate (who is a student) was all surprised that we had to work on Friday (um it’s a Buddhist country silly).
Tomorrow will be all about getting stuff ready for Sat and getting a a few sheets to the wind 😉
Merry Christmas Everyone.
I love you all, I wish we could all be together (I’d say for the holidays.. but meh I don’t care about the holidays I would take all together anytime!)
xo
I cannot imagine how much it would suck to work Christmas day with no festiveness.
Your eggnog recipe sounds repulsive… but I hate eggnog, lol.
Love you tons and miss you more…
